2015 has been an exciting year for cheese! Dairy trends are focusing on healthy & exciting flavors, while dairy products continue to grow closer toward capturing the coveted Center of the Plate. Couple these movements with the mounting resurgence of re-invented classic dishes and the result is wonderful pairings of dairy and classic dishes, spiking consumer’s taste buds throughout the international culinary scene.


With this in mind, let me share with you a savory-sweet combination that can be eaten for breakfast, lunch or dinner. Even kids will like this option, without ever knowing they are consuming their vegetables!

Spinach Cheddar Pancakes with Tomato-Orange Cream Sauce
For the Sauce:
5 Sundried Tomatoes
2 whole peeled tomatoes
1 teaspoon orange zest
¾ Cup heavy cream
Healthy Twist: Substitute the heavy cream for 6 tablespoons of Cream Cheese!

For the Pancakes:
10 ounces chopped spinach
4 tablespoons unsalted butter
1.5 cups grated Winona Reserve sharp Wisconsin Cheddar (Yellow or White – Your Choice)
1 Large egg, beaten
2 egg whites
2/3 cup low-fat milk
1 cup all-purpose flour
2 ½ teaspoons baking powder
1 teaspoon salt
Winona Pure Olive oil for frying
