PORK CARNITAS

Pork Carnitas

Ingredients Needed:

  • Poblano peppers
  • 2 White onions
  • Green chili's
  • Pork butt roast
  • Colby jack cheese 
  • Chipotle mayo

Assembly: 

  • Seed the pablano peppers
  • Roast 2 poblano peppers on a gas burner until blackened 
  • Put them in a paper bag to steam for about 10 minutes
  • Blend the green chilis with the 2 white onions and seeded poblanos until they're a paste 
  • Rub this paste over the boneless pork butt roast 
  • Place the roast in a crock pot with shallow water
  • Leave the crock pot on over night at a low setting, 10-12 hours
  • Remove and discard the fat 
  • Use the meat as you would taco meat
  • Garnish with colby jack cheese, chipotle mayo, and pico
  • Enjoy!
