Stuffed Acorn Squash


Ingredients Needed: 

  • Chopped celery
  • Chopped onion
  • Chopped carrots
  • Spicy Italian sausage
  • Cooked brown rice


  • Spray a non stick pan with WP EVOO or WP Coconut, sauté carrots, onions celery until almost translucent
  • Remove casing from sausage and add to onion and carrot mixture, then sauté until golden brown
  • Deglaze the pan with a splash of cream sherry and then add the cooked brown rice
  • Cook until combined
  • Add a little grated Asiago and salt and pepper 
  • In a shallow roasting pan, cut the bottom point off the acorn squash so it will stand upright
  • Cut off the stem portion and clean out the seeds (save and roast if desired)
  • Cook until done - about 50 minutes at 375 degrees
  • Stuff the sausage rice mixture into the squash and return to the oven until it becomes hot all the way through
  • Serve and enjoy!
