Swiss Chard Potato Frittata


Ingredients needed: 

  • 10-12 eggs beaten and set aside 
  • Roughly chopped washed swiss chard
  • Par boiled sliced potato's 
  • Chopped red onion 
  • Garlic, salt and pepper for seasoning
  • Shredded monterey jack and swiss blend 


  • Saute the chard, add the onions after a few minutes
  • Add the potato and cook together for a few more minutes
  • Add the salt pepper and garlic 
  • Put in a shallow baking dish
  • Spray with olive oil 
  • Pour mixture over the beaten eggs
  • Add the shredded cheese then bake until the dish begins to brown slightly 
  • Serve with a bit of sour cream and fresh chopped tomato's as a garnish!
