Ingredients needed:
- Cranberries
- Chicken stock
- Kale
- Spinach
- Navy beans
- Kidney beans
- Red/green lentils
- Onions
- Carrots
- Chicken sausage
- Celery
- Red bell peppers
- Garlic
- Basil
- Apples
- Winona Pure Extra Virgin Olive Oil
Assembly:
- Rinse cranberries, navy beans, kidney beans, lentlis and then set aside to soak overnight
- Saute chopped up onions, celery, bell peppers, garlic and basil, and set aside
- After the beans have soaked, drain and rinse
- Cook beans in boiling water for an hour and a half, then drain
- Saute your chicken apple sausage in Winona Pure Extra Virgin Olive Oil and add onions and diced apples
- Add in the other sauteed veggies and 8 cups of chicken stock
- Add the beans in and simmer for 35 minutes
- Finish the soup with chopped kale or spinach
- Enjoy!
