Ingredients needed:
- Corn Chowder
- Med. onion
- 6 cups frozen corn
- 3 cups reduced sodium chicken stock
- ½ cup chopped sweet red pepper
- thyme
- rosemary
- pepper
- pinch of cayenne pepper
- 1 can of lump crab
Assembly
- coat sauce pan with WP EVOO and add onion cook and stir over medium heat 4min.
- add 4 of the cups of corn and stir and soften 5min.
- Add 2 cups of broth bring to a boil, then reduce heat to simmer 10 min.
- In a blender process soup in batches until smooth.
- Return it to the pot and add all remaining ingredients and simmer until tender.
- Beets: Peel and spay with EVOO salt pepper garlic powder and roast until fork tender.
- Brussels Sprouts: Shave to Sprouts with a Mandolin and sauté them in WP EVOO and pieces of par cooked bacon until slightly brown.
- Top with Balsamic glaze and serve.
