Butternut Squash and Asiago Risotto

Ingredients Needed: 

  • Winona Pure Extra Virgin Olive Oil Spray
  • Winona Pure Coconut Oil Spray 
  • Butternut squash 
  • Asiago cheese 
  • Arborio rice
  • Shallots
  • Minced sage 
  • Salt and pepper 
  • Cream sherry or white wine 
  • Vegetable stock 

Assembly: 

  • Cube and spray the squash with either Winona Pure EVOO, or Coconut Oil Spray 
  • Roast the cubed squash 
  • In a saute pan sprayed with Winona Pure EVOO or Coconut Oil Spray - toast the arborio rice, shallots minced sage and salt and pepper 
  • Splash with cream sherry or white wine 
  • Let alcohol cook off and add vegetable stock to cover rice 
  • Cook off and repeat this until the rice is nice and tender
  • Add the diced squash and finish with the shredded asiago cheese 
  • Serve and enjoy!
