Ingredients Needed:
• Della Tera Shaved Asiago Cheese
• Cooked rigatoni pasta
• Lightly steamed asparagus tips
• Diced onion
• Drained artichoke hearts
• Zest of two lemons
• Butter
• Half and half
Assembly:
• Cook Pasta and set aside
• In a medium sauce pan sauté the diced onions and lemon zest until soft. add in Artichoke hearts and asparagus tips and sauté (careful not to overcook)
• Add the half and half and let reduce/thicken
• Add in the pasta & toss to coat
• Top with shaved asiago and serve!
This is a very light warm weather pasta dish, meant to be enjoyed out on beautiful Terrace!
